I'm making Parmesan Crusted Chantilly Potatoes and they use a cup of cream and a 1/2 cup of milk, but I didn't have any milk, so I subbed - cream! I'm picking up mail & newspaper, putting out garbage, etc. Found a nice casserole recipe with wide noodles, ham, asparagus and a low-fat cream sauce. Divided it into two ramekins. Will bake one for me and put the other in her refrigerator so she and her husband will have supper waiting for them when they return tomorrow afternoon. I like sharing this way. The first time I ordered them they were fantastick, the second time the meat was stringy and chewy so I decided I'd try to come up with a recipe that worked for me. I tried it tonight, and it came out pretty good, though I want to tweak it for next time. I thinly sliced some sirloin steak and marinated it in a mixture of soy sauce, minced ginger, a spoonful of hoisin sauce, juice of a lime and a spoonful of oil. I sauteed a sliced sweet onion with a sliced Hungarian pepper, and I cut some fresh pineapple into bite sized pieces. When the steak strips were almost done I added the pineapple to the pan and cooked another minute, I then loaded the meat, pineapple, onions & peppers on a warm flour tortilla. Thimble Hall Posted November 5, 2017 Author Share Posted November 5, 2017 Yesterday I cooked spaghetti for 50 people, and chili for 25 for the community homeless dinner so after all that I ate just a sandwich and flopped in a chair. odd kind of sandwich very popular these days in the UK, tuna and sweetcorn in mayo. I only use albacore and it turns out quite nice of a rustic sort of bread. For some reason, I went all out for boxed foods this month - Rice-a-Roni and Hamburger Helper. I have no idea why. Sodium, here I come! (I do drink tons of water, though and while I was in the hospital for my aneurysm, they actually wanted me to eat chips because I needed the salt - I was washing all the sodium out of my system drinking so much water) But I got the Fried Rice Hamburger Helper (if that makes sense) and I have two chicken breasts I'm adding to that tonight. We're going to the Blue Angels homecoming air how tomorrow and a Veteran's Day event on Saturday, and I'll be in no condition to cook anything fancy (or otherwise) either day. My brother and his wife are coming over for dinner at 3 I'll be using my George Foreman rotisseries for the roast beef, Instant Pot for the mussels appetizers and dinner potatoes, and the microwave for veggies. Probably back to the Instant Pot for dessert, dairy-free rice pudding. The air fryer may make an appearance as well. I'm very glad counter space isn't an issue in my kitchen.
